NUTRITION AND MENU PLANNING

Culinary Arts 114 examines the principles of nutrition and their
relation to quantity food preparation and menu planning. The course emphasizes
menu planning in relation to various food customs, numerous age groups, and identified
deficiency diseases applicable to quantity food production. Lecture 3 hours.
